Tiramisu, recipe, mascarpone cheese, ladyfingers, coffee, cocoa powder, eggs, sugar, vanilla extract, espresso, layer, chill
Ingredients:
- 6 egg yolks
- 3/4 cup granulated sugar
- 2/3 cup milk
- 1 1/4 cups mascarpone cheese
- 1 3/4 cups heavy cream
- 1 teaspoon vanilla extract
- 24 ladyfingers
- 1 1/2 cups strong brewed coffee or espresso, cooled
- Cocoa powder, for dusting
Instructions:
- In a large mixing bowl, whisk together the egg yolks and sugar until well combined and the mixture becomes pale yellow.
- In a saucepan, heat the milk until it begins to simmer. Remove from heat and gradually pour the milk into the egg yolk mixture, whisking constantly.
- Transfer the mixture back to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon. Remove from heat and let it cool to room temperature.
- In a separate mixing bowl, beat the mascarpone cheese until creamy and smooth. Add the cooled egg mixture and vanilla extract, and mix until well combined.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until evenly incorporated.
- Dip each ladyfinger into the cooled coffee or espresso for a few seconds, making sure not to oversaturate them. Arrange half of the soaked ladyfingers in a single layer in the bottom of a rectangular dish or individual serving glasses.
- Spread half of the mascarpone mixture over the ladyfingers, smoothing it out with a spatula. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
- Cover the dish or glasses with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld together.
- Just before serving, dust the top of the Tiramisu with cocoa powder using a fine-mesh sieve.
- Serve chilled and enjoy!
