Ingredients:
For the pasta dough:- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
For the filling:
- 1 cup ricotta cheese
- 1 cup cooked spinach, squeezed dry and chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
For the sauce and garnish:
- Your choice of sauce (e.g., marinara sauce, Alfredo sauce)
- Grated Parmesan cheese
- Chopped fresh herbs (e.g., basil, parsley) for garnish
Instructions:
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into it. Beat the eggs with a fork, gradually incorporating the flour until a dough forms.
- Transfer the dough onto a clean, floured surface. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. If the dough feels too dry, you can add a little water, one tablespoon at a time. If it feels too sticky, add a little more flour.
- Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
- While the dough is resting, prepare the filling. In a bowl, mix together the ricotta cheese, cooked spinach, grated Parmesan cheese, salt, and pepper until well combined.
- After the dough has rested, divide it into two equal portions. Roll out one portion of the dough on a floured surface until it's thin but not transparent. Keep the other portion covered to prevent drying.
- Spoon teaspoon-sized dollops of the filling onto the rolled-out dough, leaving space between them. Fold the dough over the filling and press around each mound to seal.
- Use a ravioli cutter or a sharp knife to cut the ravioli into desired shapes. Repeat the process with the remaining dough and filling.
- Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook until they float to the top, which should take about 3–5 minutes. Cook them in batches to avoid overcrowding the pot.
- Drain the cooked ravioli and transfer them to a serving dish or individual plates.
- Serve the ravioli with your choice of sauce. Sprinkle grated Parmesan cheese and chopped fresh herbs on top as a garnish.
