- 4 ounces (115g) pancetta, diced

Instructions:
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of the cooking water.
In a large skillet, cook the diced pancetta over medium heat until crispy and golden brown. Remove the skillet from the heat and set aside.
In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined. Set the mixture aside.
