 Here's a recipe for Peking Duck

Dish: Peking Duck

Ingredients:

  • 1 whole duck (about 5-6 pounds)
  • 2 tablespoons maltose or honey
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon Chinese five-spice powder
  • 1 teaspoon salt
  • 1 teaspoon sesame oil
  • 1 teaspoon white vinegar
  • 6-8 green onions, cut into 3-inch sections
  • 1-inch piece of ginger, sliced
  • 1 tablespoon vegetable oil

For serving:

  • Thinly sliced cucumber
  • Thinly sliced scallions
  • Hoisin sauce
  • Mandarin pancakes or steamed buns

Instructions:

  1. Prepare the duck by rinsing it thoroughly under cold water. Pat dry with paper towels.

  2. In a small bowl, mix together maltose or honey, soy sauce, hoisin sauce, Chinese five-spice powder, salt, sesame oil, and white vinegar to make the marinade.

  3. Use a brush to evenly apply the marinade all over the duck, inside and out. Be sure to get the marinade into the cavity of the duck as well.

  4. Let the duck marinate in the refrigerator for at least 2 hours, or preferably overnight, uncovered. This will help dry out the skin, resulting in a crispy texture.

  5. Preheat the oven to 350°F (175°C).

  6. Stuff the cavity of the duck with the green onions and ginger slices.

  7. Heat a large oven-safe skillet or roasting pan over medium heat. Add vegetable oil and heat it until hot but not smoking. Place the marinated duck in the skillet, breast-side down, and sear for about 5 minutes until the skin turns golden brown.

  8. Carefully flip the duck using tongs or spatulas, so it is now breast-side up. Transfer the skillet or roasting pan to the preheated oven.

  9. Roast the duck for approximately 2 to 2 1/2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).

  10. Remove the duck from the oven and let it rest for about 10 minutes before carving.

  11. To serve, thinly slice the roasted duck. Arrange the slices on a platter alongside the cucumber, scallions, hoisin sauce, and Mandarin pancakes or steamed buns.

  12. To eat, spread a little hoisin sauce on a pancake or bun, top with a few slices of duck, cucumber, and scallions. Roll it up and enjoy!
